A fresh potato, with skin on, contains 45% of the recommended daily value (DV) of vitamin C, 18% DV of potassium, almost no sodium, no fat, and no cholesterol.

The National Cancer Institute recommends a minimum of five daily servings of fruit and vegetables. One 5 oz. Wisconsin potato is considered one vegetable serving.

Low-fat diets rich in fiber-containing grain products, fruits, and vegetables may reduce the risk of some types of cancer.
